Natural process coffee: how it works and why Ethiopian naturals are different
What is natural process coffee?
Natural process coffee is produced by the dry method: harvested coffee cherries are dried whole, with the fruit pulp still attached to the green bean, rather than being pulped and washed before drying. The fruit dries down over weeks on raised beds or patios until the cherry reaches the correct moisture level; only then is it mechanically hulled to separate the dried skin and parchment from the bean inside.
The contrast with washed processing is procedural and immediate. In washed (wet) processing, the fruit is removed within hours of harvest: the cherry is pulped, the bean ferments briefly in water tanks to break down the remaining mucilage, and drying begins on a clean green bean. In natural processing, the fruit stays on through the entire drying phase. The prolonged contact allows fruit sugars and fermentation compounds to migrate into the bean, and those compounds are what produce the distinctive natural coffee flavor profile in the cup.
Natural processing is not automatically a premium indicator. A well-executed natural from a high-altitude Ethiopian origin can score 87 or above on the SCA scale; a poorly executed natural from low-altitude production with inconsistent drying can fall below the specialty threshold entirely. The processing method is one variable; execution quality and altitude are the others that determine where the lot lands.
How does natural processing work step by step?
The natural process begins at harvest. Ripe red or yellow cherries are hand-picked, then sorted: underdeveloped, overripe, or damaged fruit is removed because any defective cherry that enters the drying phase will introduce off-notes into the finished lot.
Once sorted, the cherries are placed on raised drying beds in thin, even layers. Raised beds (elevated wooden or bamboo drying tables covered with mesh) promote airflow beneath the cherries, which reduces mold risk and speeds uniform drying. Cherries are turned and raked regularly to prevent uneven moisture development and to catch any overripe or molding fruit before it spreads.
The drying phase runs 15 to 30 days depending on altitude, ambient humidity, and temperature. At higher altitudes (2,000 meters and above), cooler temperatures and thinner air slow the drying further, which extends fermentation time and increases flavor complexity. The cherries move from bright red to deep maroon to a raisin-like dark brown as moisture drops from approximately 60 percent to a target of 10 to 12 percent.
After drying, the lots move to dry milling. Mechanical hullers strip the dried cherry skin, parchment, and any remaining silverskin from the bean. The milled green coffee is then graded under the Ethiopian ECX physical defect system, bagged in grain-pro or jute, and prepared for export. How does natural process coffee taste?
Natural process coffee delivers a fruit-forward cup with jammy complexity, full body, and lower acidity than washed lots from the same origin. The dominant flavor notes from well-executed Ethiopian naturals are blueberry, strawberry wine, tropical fruit (mango, passionfruit), and stone fruit (apricot, peach), with a syrupy mouthfeel and a long, sweet finish.
The contrast with washed Ethiopian coffee is significant. Washed Yirgacheffe delivers jasmine, bergamot, and lemon with a tea-like body; natural Yirgacheffe from the same altitude produces blueberry, tropical sweetness, and a heavier mouthfeel. The terroir is identical; the processing method redirects which compounds become dominant in the cup.
For roasters, the practical implication is in roast development. Natural lots tolerate more development without losing fruit identity than washed lots do. Washed Yirgacheffe pushed past City+ loses its jasmine and lemon and collapses into generic roast character. A natural Guji at the same roast level retains blueberry and tropical fruit because those compounds are more heat-stable than the volatile florals in washed lots.
Natural Ethiopian lots work best as: single-origin espresso where fruit intensity and body hold up through extraction; omni-roast single-origin offerings targeting fruit-forward filter programs; and espresso blend components where natural fruit sweetness balances a more neutral or bright washed base.
Which Ethiopian origins produce the best naturals?
Ethiopian origins divide along climate and infrastructure lines in how natural processing is used.
Harrar (Eastern Highlands, 1,500–2,100m): Ethiopia's exclusively natural origin. Harrar's dry eastern climate makes washed processing impractical; the region has used the dry method for centuries. The cup delivers dry fruit, wine, blueberry, and spice. Harrar naturals are among the most distinctive Ethiopian lots available, with a profile that has no close equivalent in washed production. For green coffee buyers who want maximum differentiation, Harrar is the natural of first choice.
Guji (Guji Zone, 1,800–2,300m): Ethiopia's highest-altitude major origin. Natural Guji is the current competition-lot standard: intense blueberry, tropical fruit, and a heavy body at SCA scores that regularly reach 87 to 89. The altitude slows drying and extends fermentation, producing greater complexity than naturals from lower elevations. Guji naturals command premium pricing and are allocated quickly each season.
Sidamo (Sidama Region, 1,400–2,200m): Both washed and natural are produced in significant volume. Natural Sidamo delivers a jammy fruit profile: stone fruit, berry, and sweetness with a rounded body. Less intense than natural Guji but more accessible in price; a reliable natural option for volume programs.
Yirgacheffe (Gedeo Zone, 1,700–2,200m): Natural Yirgacheffe is produced in smaller volumes than washed but represents a significant market in its own right. The same high-altitude terroir that produces the jasmine and bergamot of washed Yirgacheffe shifts entirely toward blueberry, strawberry, and tropical fruit in the natural. Available in Grade 1 and Grade 2; allocated earlier in the season than washed lots.
Limu and Jimma: Predominantly washed. Natural lots are produced in smaller volumes; the washed cup character is more consistent and better suited to both origins' commercial positioning.

What should green coffee buyers check before buying natural lots
Natural process lots require more due diligence before container commitment than washed lots because the processing method introduces more variability. Three checks matter most.
Pre-shipment sample: This is non-negotiable for natural lots. The elevated defect risk in natural processing, primarily over-fermentation and mold, means the pre-shipment sample can diverge from the cupping report more than washed lots typically do. Approve the physical green sample before releasing the container, not on the basis of the cupping report alone. Moisture content: Moisture content is the most important physical measurement for green coffee. For naturals specifically, uneven drying creates moisture variation within a single lot. The target range is 10 to 12 percent; ask for moisture analysis with every natural lot. Lots above 12 percent carry elevated risk of mold in transit; lots below 10 percent are over-dried and will have accelerated flavor deterioration in storage.
Defect indicators in the cup: Well-executed naturals show clean fruit. Defective naturals show boozy or fermented-alcohol notes (over-fermented cherry), mustiness (mold from inadequate turning), or medicinal and phenolic notes (poor cherry selection at harvest). Any of these in a cup sample is a rejection signal; they do not improve after roasting.
